Is a vintage turntable a good first turntable?

Only if you're prepared for the maintenance side — belts perish, bearings need oiling, and cartridges wear out, none of which is covered by a warranty on a decades-old deck. A new budget turntable is the easier first buy; vintage rewards people who either enjoy tinkering or are buying from a specialist who has already serviced it.

Why do typical prices vary so much for the same vintage model?

Condition and originality do most of the work — an untouched original with its factory arm and cabinet in good cosmetic order will fetch far more than the same model with replaced parts, cosmetic damage, or an unclear service history. Treat the typical price on this site as a midpoint, not a fixed value.
